South Africa's coastline gave us snoek braais and kingklip on the grid; the Isle of Man gives us queenies, scallops and fresh catch from the Irish Sea. This blend bridges both: bright lemon and dill, gentle fennel and white pepper, garlic without overpowering delicate flesh. Rub lightly on fish fillets, prawns or scallops, or mix with butter for a baste over Sekelbos coals.
