Beef Potjiekos

A slow-cooked layered stew made in a three-legged cast-iron pot over coals β€” the trick is patience, and never stirring.

Ingredients

  • 1 kg beef shin, cubed
  • 2 onions, sliced
  • 4 carrots, chunked
  • 4 potatoes, halved
  • 2 cups beef stock
  • 1 cup red wine
  • 2 tbsp tomato paste
  • Thyme, bay leaves, salt and pepper

Method

  1. Brown the beef in oil in the potjie over a small bed of coals, then lift it out.
  2. Soften the onions, return the meat, add the stock, wine and tomato paste, and bring to a gentle simmer.
  3. Layer the vegetables on top β€” do not stir β€” cover and let it cook low and slow for 2–3 hours, topping up coals as needed.
  4. Season, give it one gentle fold, and serve straight from the pot with rice or pap.
