Braaibroodjie
The classic grilled cheese, tomato and onion sandwich cooked in a hinged grid over dying coals β the unofficial side dish of every braai.

Ingredients
- 8 slices white bread
- Soft butter, for spreading
- 200 g mature cheddar, grated or sliced
- 2 tomatoes, thinly sliced
- 1 small onion, thinly sliced
- Chutney, salt and pepper
Method
- Butter the bread on the outsides so it crisps against the grid.
- Build four sandwiches with cheese, tomato, onion, a smear of chutney and a pinch of salt and pepper.
- Clamp them in a hinged braai grid.
- Braai over gentle, dying coals, turning often, for about 6β8 minutes until golden and the cheese has melted.
